  • 2 cups Parsnips peeled and cut into 1½-inch pieces

  • 0.5 tablespoon Fresh Rosemary minced
  • 2 tablespoons Extra Virgin Olive Oil
  • 0.25 teaspoon Garlic Powder to taste

Preparation

  • Start by peeling the carrots and parsnips. Cut each vegetable into 1½-inch pieces to ensure they cook evenly in the air fryer.
  • Rinse the fresh rosemary under cool water, then finely mince it.
  • In a medium mixing bowl, add the cut carrots and parsnips along with the minced rosemary. Stir gently to mix.
  • Drizzle 2 tablespoons of extra virgin olive oil over the vegetable mixture, then sprinkle in ¼ teaspoon of garlic powder, along with salt and pepper to taste. Stir until evenly coated.
  • Transfer the seasoned vegetables into the air fryer basket, placing them in a single layer.
  • Set your air fryer to cook at 375°F (190°C) for 20 minutes. Halfway through, shake the vegetables gently.
  • If using a smaller basket-style air fryer, cook in two batches for even cooking.
  • Once cooked, carefully remove the vegetables and transfer to a serving dish.
