Ingredients
  

For the Crust

  • 300 g Biscoff cookies Crushed into fine crumbs
  • 150 g Unsalted butter Melted
  • 1 teaspoon Cinnamon powder Optional
  • 100 g Brown sugar
  • 1 pinch Salt

For the Cheesecake Filling

  • 10 g Unflavored gelatin powder
  • 45 ml Cold water
  • 500 ml Cold thickened or heavy cream
  • 600 g Cream cheese Softened
  • 150 g Caster/superfine sugar
  • 2 teaspoon Vanilla extract
  • 15 ml Lemon juice Optional

For the Chantilly Cream

  • 250 ml Thickened or heavy cream For Chantilly cream
  • 50 g Caster or icing sugar
  • 1 teaspoon Vanilla extract For Chantilly cream

For Decoration

  • 200 g Fresh berries Like strawberries, blackberries, raspberries, cherries
  • 2 pieces Orange slices Cut into half moons
  • 3 sprigs Fresh rosemary
  • 50 g Icing sugar For dusting

Instructions
 

Preparation

  • Lightly grease a 9×13-inch pan and line it with parchment paper, ensuring the edges overhang.
  • Blitz the Biscoff cookies in a food processor, then mix with melted butter, cinnamon, brown sugar, and salt until resembling moist sand. Press into the prepared pan and refrigerate for 15 minutes.
  • In a small bowl, sprinkle gelatin over water and let it bloom for 3–5 minutes. Microwave until melted, then cool slightly.
  • Whip the cold cream until firm peaks form, then set aside.
  • Beat softened cream cheese and caster sugar until smooth. Add vanilla, optional lemon juice, and melted gelatin; mix briefly.
  • Fold in the whipped cream gently and pour over the crust. Smooth the top and refrigerate for at least 12 hours.
  • Before serving, whip the cold cream with icing sugar and vanilla until softly whipped. Spread over the cheesecake and decorate with berries, orange slices, and rosemary. Dust with icing sugar.

Notes

Chill the cheesecake for at least 12 hours for optimal firmness and flavor. Make the Chantilly cream fresh before serving for the best taste.
