  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, granulated sugar, and ground cinnamon. Mix well and press into the bottom and sides of a 9-inch springform pan.
  • Bake the crust for 8-10 minutes until lightly golden brown. Let cool completely on a wire rack.
  • Use a stand mixer to beat softened cream cheese until smooth. Gradually add granulated sugar and all-purpose flour, beating until just combined.
  • Incorporate vanilla extract and lavender extract into the mixture and beat until evenly mixed.
  • Add eggs and egg yolks, one at a time, mixing gently to maintain a light texture.
  • Stir in heavy cream and honey until just combined.
  • Fold in dried culinary lavender buds.
  • Wrap the bottom of the springform pan tightly with aluminum foil. Place inside a larger roasting pan for a water bath.

  • Pour hot water into the roasting pan until halfway up the sides of the springform pan.

  • Strain the glaze to remove lavender buds and let it cool.
  • Remove cheesecake from springform pan and place on a serving platter. Pour the glaze over the top.
