For the Blueberry Filling

  • 2 cups fresh blueberries
  • ½ cup white sugar Can substitute with honey or maple syrup

For the Batter

  • 1 cup self-rising flour Can substitute with all-purpose flour and baking powder
  • ½ cup whole milk Almond milk can be used for dairy-free option
  • ½ cup butter (melted) Coconut oil can substitute for dairy-free option
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon Adjust to taste

Directions

  • Preheat the oven to 350°F (175°C).
  • Pour the melted butter into the bottom of the greased baking dish.
  • In a large bowl, toss the fresh blueberries with ½ cup of white sugar and let sit for about 10 minutes.
  • In another bowl, whisk together self-rising flour, ½ cup of white sugar, whole milk, and vanilla extract until smooth.
  • Pour the batter over the melted butter in the baking dish.
  • Spoon sugared blueberries on top of the batter without stirring.
  • Sprinkle ground cinnamon over the top.
  • Bake for 45 to 50 minutes, until golden brown and juices are bubbling.
  • Cool for at least 10 minutes before serving.

Notes

For best results, use fresh berries and allow the cobbler to cool before serving for easier slicing.
