Step-by-Step Instructions

  • Peel and chop a small Russet potato into even chunks. Place in boiling water and cook for about 10 minutes until fork-tender. Drain and mash until smooth. Let cool.
  • In a mixing bowl, combine cooled mashed potato, vanilla extract, and a pinch of salt. Gradually add in powdered sugar until a thick non-sticky dough forms.
  • Dust a sheet of parchment paper with powdered sugar. Roll dough out into a rectangle about ¼ inch thick.
  • Spread creamy peanut butter evenly over the dough rectangle, leaving a small edge clear around the sides.
  • Roll the dough into a tight log using the parchment paper. Wrap tightly and refrigerate for at least 1 hour.
  • After chilling, unwrap and slice the log into ½ inch pieces. Serve chilled or at room temperature, optionally dusted with extra powdered sugar.

Notes
