Preparation

  • In a mixing bowl, cream the softened butter and ¾ cup of sugar until light and fluffy.
  • Add egg yolks one at a time, mixing well. Stir in milk, vanilla, lemon juice, and lemon zest.
  • Whisk together flour, baking powder, and salt in a separate bowl. Gradually add to wet mixture.
  • Whip egg whites until soft peaks form, gradually add ¼ cup sugar, and beat until stiff peaks.
  • Gently fold egg whites into the batter until evenly mixed.
  • Pour the batter into the prepared dish. Carefully pour 1 cup of hot water over the batter without stirring.
  • Bake for 40-45 minutes until golden and center is slightly jiggly. Let cool before serving.
