Ingredients
  

For the Batter

  • 1 cup All-purpose flour A staple for creating a fluffy texture.

  • ½ teaspoon Baking soda Supports leavening; ensure fresh.

For the Frosting

  • 8 oz Mascarpone cheese The star of the frosting.
  • ½ cup Powdered sugar Sweetens and smoothens frosting.
  • 1 teaspoon Vanilla bean paste Elevates flavor with specks.
  • 1 tablespoon Amaretto Adds almondy warmth.
  • 1 tablespoon Unsweetened cocoa powder For dusting.

Instructions
 

Batter Preparation

  • Preheat your oven to 160ºC (320ºF) and line a cupcake tin with liners.
  • Sift together all-purpose flour, almond flour, baking powder, baking soda, and salt.
  • In a stand mixer, beat unsalted butter and granulated sugar for 3 minutes.
  • Add the eggs one at a time, mixing just enough after each addition.
  • Slowly add the sifted dry ingredients until just combined.
  • Fold in sour cream, vegetable oil, and vanilla extract.
  • Gently fold in the instant espresso powder into half the batter.
  • Spoon alternating batters into cupcake liners and swirl gently.
  • Bake for 20-23 minutes or until a toothpick comes out clean.
  • Let cool in the tin for 5 minutes before transferring to a wire rack.

Frosting Preparation

  • In a clean stand mixer, beat room temperature butter for 4 minutes.
  • Add mascarpone cheese and blend until fully combined.
  • Gradually mix in half of the powdered sugar, vanilla bean paste, and Amaretto.
  • Add the remaining powdered sugar and blend until smooth.
  • Fill a piping bag with frosting and frost each cooled cupcake.
  • Dust lightly with cocoa powder before serving.

Notes

For the best results, use fresh ingredients and don't overmix the batter. Allow the cupcakes to cool completely before frosting.
