Cake Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, combine softened butter and granulated sugar. Beat until light and fluffy (3–5 minutes).
  • Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition.
  • Whisk together cake flour, baking powder, and salt in a separate bowl.
  • Gradually add dry mixture to wet mixture, alternating with buttermilk, until just combined.
  • Fold in coconut flakes and toasted pecans gently.
  • Divide batter between prepared pans and smooth tops. Bake for 25–30 minutes until toothpick comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  • Prepare frosting by whipping heavy cream, powdered sugar, and vanilla until soft peaks form.
  • Frost the top of one cake layer, stack second layer on top, and frost the entire cake.
