Ingredients
  

For the Cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 teaspoon vanilla extract
  • 1 cup buttermilk

For the Whipped Cream

  • 2 cups heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract for whipped cream

For the Cherry Filling

  • 2 cups cherries (drained, preferably morello cherries)
  • 2 tablespoon cornstarch
  • 1 cup cherry juice
  • ½ cup water
  • 1 tablespoon splash of Kirsch optional
  • ½ cup chocolate shavings optional, for garnish

Instructions
 

Cake Preparation

  • Preheat your oven to 350°F (175°C) and prepare the cake pans.
  • In a bowl, whisk the dry ingredients together until well combined.
  • In another bowl, mix the wet ingredients until smooth and then combine gently with the dry mixture.
  • Divide the batter into prepared pans and bake for 25-30 minutes.
  • While cooling, prepare the cherry filling by combining cherry juice, cornstarch, and water until thickened.
  • Whip the cream until stiff peaks form, adding in powdered sugar and vanilla.
  • Layer the cakes with whipped cream and cherry filling, repeating to create four layers.
  • Frost the cake with remaining whipped cream and garnish with chocolate shavings and cherries.
  • Chill the cake for at least two hours before serving.

Notes

For best results, choose quality cherries and ensure cake layers are even before frosting.
