Step-by-Step Instructions

  • Brew 1 cup of strong espresso, allowing it to cool for about 10 minutes. Mix in 2 tablespoons of Marsala wine or coffee liqueur.
  • In a glass bowl, combine 4 egg yolks and ½ cup of granulated sugar, set over a pot of simmering water and whisk for 8-10 minutes until creamy.
  • Remove from heat and gently fold in 8 ounces of mascarpone cheese until smooth.
  • In a separate bowl, whip 1 cup of heavy cream until soft peaks form, about 3-5 minutes.
  • Fold the whipped cream into the mascarpone mixture in three parts.
  • Dip each ladyfinger into the coffee mixture quickly and arrange half in your serving dish.
  • Spread half the mascarpone mixture over the ladyfingers.
  • Repeat layering with remaining ladyfingers and mascarpone mixture.
  • Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  • Dust the top with cocoa powder before serving.

Notes

Use high-quality espresso for the best flavor and opt for pasteurized eggs for safety. Dust cocoa powder just before serving for a fresh appearance.
