Step-by-Step Instructions for Strawberry Cheesecake

  • Preheat your oven to 325°F (163°C).
  • In a food processor, pulse graham crackers into fine crumbs. Combine crumbs with melted butter, brown sugar, granulated sugar, and cinnamon.
  • Press the crumb mixture into the bottom and sides of a springform pan.
  • Bake the crust for about 10 minutes until golden, then cool.
  • Beat softened cream cheese in a stand mixer until smooth. Gradually add sour cream, sugar, and vanilla extract until combined.
  • Add eggs one at a time, mixing gently after each addition.
  • Pour the cheesecake filling over the cooled crust and bake for 45-50 minutes until the center is slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door slightly ajar to cool.
  • Chill the cheesecake in the refrigerator for at least 4-6 hours or overnight.
  • Combine strawberries, sugar, lemon juice, and vanilla extract in a saucepan over medium-low heat and stir until softened.
  • Mix cornstarch with water and add to the strawberry mixture, stirring until thickened.
