Ingredients
  

For the Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • 6 tablespoons unsalted butter, melted

For the Cheesecake Filling

  • 24 ounces cream cheese softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream

For the Apple Layer

  • 2 cups peeled and diced apples like Honeycrisp or Granny Smith
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon flour
  • 1 teaspoon lemon juice

For the Crisp Topping

  • ½ cup old-fashioned oats
  • cup all-purpose flour
  • cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ cup unsalted butter, cold and cubed

Preparation Steps

  • Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan, wrapping the bottom in aluminum foil.
  • Combine the graham cracker crumbs, brown sugar, and cinnamon in a medium bowl. Add the melted butter and mix well. Press into the bottom of the pan and bake for 8-10 minutes until lightly golden.
  • Peel and dice the apples and toss with brown sugar, cinnamon, flour, and lemon juice. Set aside.
  • In an electric mixer, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla, sour cream, cinnamon, and nutmeg until combined.
  • Pour the cheesecake filling over the cooled crust, smoothing the top. Distribute the spiced apple mixture over the cheesecake layer.
  • Combine oats, flour, brown sugar, and cinnamon in a bowl. Cut in cold butter until crumbly. Sprinkle over the apple layer.
  • Place the springform pan in a larger baking dish filled with hot water. Bake for 60-70 minutes, until the center is mostly set.
  • Cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight before serving.

Notes

For best results, choose fresh apples and chill the cheesecake overnight for optimal texture and flavor.
