For the Popcorn

  • 1 cup Mushroom popcorn kernels
  • 2 tablespoons Coconut oil

For the Caramel

  • 14 pieces Werther’s Original caramels
  • ½ cup Unsalted butter
  • 1 cup Light brown sugar
  • 1 teaspoon Baking soda

Step-by-Step Instructions

  • Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  • Melt 2 tablespoons of coconut oil in a medium saucepan over medium heat for about 2-3 minutes.
  • Add 14 pieces of Werther’s Original caramels to the melted coconut oil. Stir continuously for about 5 minutes until fully melted.
  • Incorporate ½ cup of unsalted butter, 1 cup of light brown sugar, and 1 teaspoon of baking soda into the caramel mixture. Stir for 1-2 minutes until bubbly.
  • Pour the caramel mixture over popped mushroom popcorn kernels in a large mixing bowl and toss gently until coated.
  • Spread the coated popcorn onto the prepared baking sheet in an even layer.
  • Bake in the preheated oven for about 10 minutes until golden brown and fragrant.
  • Remove from the oven and let the caramel popcorn cool completely before breaking into clusters.
