Chai Cake Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, cardamom, ginger, cloves, and salt.
  • In another bowl, beat together softened butter and sugar until light and fluffy.
  • Add eggs one at a time, then stir in vanilla extract.
  • Gradually mix the dry ingredients into the batter, alternating with chai tea and buttermilk.
  • Pour the batter into the greased baking pan and smooth the top.
  • Bake for 30 to 35 minutes, checking for doneness with a skewer.
  • Once baked, let the cake cool in the pan for about 15 minutes before transferring to a wire rack.
  • Prepare the chai syrup by simmering water, sugar, cinnamon, cardamom, cloves, and star anise in a saucepan.
  • After simmering for 10-15 minutes, strain the syrup and let it cool.
  • Poke holes in the cooled cake with a skewer and brush the chai syrup over the top.
  • To make the frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
