Step-by-Step Instructions

  • Preheat your oven to 325°F (163°C). Gather all your ingredients and equipment, including a mixing bowl and a baking sheet lined with parchment paper.
  • In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Stir until well blended.
  • Using a spoon or small ice cream scoop, drop mounds of the coconut mixture onto the prepared baking sheet, spacing them out.
  • Bake for 15 to 18 minutes until edges are golden brown, keeping centers soft and chewy.
  • Allow to cool completely on a wire rack for about 10-15 minutes.
  • Melt chocolate in a microwave-safe bowl or double boiler, stirring until smooth.
  • Dip the bottoms of the cooled macaroons into the melted chocolate and drizzle extra over the tops for decoration.
  • Place macaroons on parchment paper and let the chocolate set at room temperature or refrigerate to quicken the process.
