Step-by-Step Instructions for Chocolate Mousse

  • Begin by chopping your dark chocolate into smaller pieces for even melting. Place the chocolate and unsalted butter in a double boiler or a microwave-safe bowl. If using a microwave, melt them in 30-second intervals, stirring in between until smooth. Once fully melted, remove from heat and let it cool slightly while you prepare the next steps.
  • Incorporate the three large egg yolks into the warm chocolate mixture, whisking until smooth and fully combined. Ensure that the chocolate isn't too hot to avoid scrambling the yolks.
  • In a clean mixing bowl, add the three egg whites along with a pinch of salt. Using an electric mixer, beat the egg whites until soft peaks form. Gradually add the granulated sugar as you continue beating, until achieving stiff, glossy peaks.
  • In a separate bowl, pour in the one cup of heavy cream. Whip the cream with an electric mixer until soft peaks form. Be careful not to overwhip.
