  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Beat in the egg and vanilla extract until well incorporated, about 1-2 minutes.
  • Whisk together the flour, cocoa powder, and salt in a separate bowl until there are no lumps.
  • Gradually add the dry ingredients to the wet mixture and mix gently until just combined.
  • Roll the dough into 1-inch balls and create a well in the center of each with your thumb.
  • Bake for 10 to 12 minutes, until the edges are set. The centers should remain soft.
  • While baking, heat the heavy cream in a saucepan until hot, then pour it over chocolate chips and stir until smooth.
  • Once the cookies are out of the oven and slightly cooled, fill each well with chocolate ganache or jam.

Notes

For best results, ensure cookies cool before filling to maintain texture of ganache or jam. Store cookies in an airtight container at room temperature for up to 3 days.
