For the Filling

  • 6–7 pieces fresh peaches, peeled and sliced or use 2 lbs of frozen/thawed peaches
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 2 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup unsalted butter for browning

For the Crust

  • 2 pieces pre-made pie crusts or make your own double pie crust
  • 1 piece egg, beaten for egg wash
  • 1 tablespoon sugar for sprinkling

Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or a 2-quart dish with butter or cooking spray.
  • In a medium saucepan, melt the unsalted butter over medium heat. Stir frequently for about 5–7 minutes until it turns golden brown and releases a nutty aroma. Remove from heat and let it cool slightly.
  • In a large mixing bowl, combine the sliced peaches, granulated sugar, light brown sugar, cornstarch, lemon juice, vanilla extract, ground cinnamon, ground nutmeg, salt, and gently fold in the slightly cooled browned butter.
  • Roll out one of the pie crusts and press it into the prepared baking dish. Use a fork to prick the crust, then pre-bake for about 10 minutes.
  • After pre-baking, pour the peach filling evenly over the warm crust.
  • Roll out the second pie crust and drape it over the peach filling. You can keep it whole or cut it for a lattice design.
  • Brush the top crust with the beaten egg and sprinkle sugar over it for added sweetness and crunch.
  • Bake the cobbler in the preheated oven for 40–45 minutes until the crust is golden brown and the filling is bubbling.
  • Let the cobbler cool for about 10–15 minutes before serving warm, ideally with vanilla ice cream.

Notes

Choosing ripe peaches will enhance the sweetness of the cobbler. Pre-baking the bottom crust prevents sogginess, and cooling helps set the filling for cleaner slices.
