Preparation Steps

  • Preheat your oven to 325°F (163°C) and prepare your springform pan.
  • Combine graham cracker crumbs, sugar, and melted butter in a bowl.
  • Press the mixture into the bottom of the springform pan to create a crust.
  • Bake the crust for 10 minutes until golden and fragrant.
  • In another bowl, beat the cream cheese and sugar until smooth.
  • Add vanilla and eggs one at a time, mixing until fully incorporated.
  • Mix in lemon juice, lime juice, and zests until combined.
  • Fold in chopped cherries and pistachios gently.
  • Pour filling over the cooled crust and smooth top.
  • Bake for 50-60 minutes until edges are set with a slight jiggle in the center.
  • Cool in the oven with the door ajar for 1 hour.
  • Transfer to the fridge and chill for at least 4 hours, preferably overnight.
  • Whip heavy cream to soft peaks and garnish cheesecake before serving.

Notes

Ensure to chill overnight for best flavor. Use room temperature eggs to avoid lumps.
