Cake Preparation

  • Begin by creaming 1 cup of unsalted butter and 1 cup of sugar in a large mixing bowl until light and fluffy, approximately 3-5 minutes. Add in 4 large eggs, 1 teaspoon of vanilla extract, and 2 tablespoons of fresh orange zest, mixing until well combined.
  • In another bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and 0.5 teaspoon of salt. Gradually incorporate the dry ingredients into the wet mixture, alternating with 0.5 cup of fresh orange juice and 1 cup of buttermilk until the batter is smooth and well combined.
  • Pour the batter into a greased 9x13 inch baking pan and spread it evenly. Bake in a preheated oven at 350°F for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Frosting and Mixing

  • In a clean mixing bowl, beat together 8 oz of cream cheese and 0.5 cup of unsalted butter until completely smooth and creamy.   • In a microwave-safe bowl, melt the orange candy melts mixed with 1 tablespoon of coconut oil, heating in 30-second intervals and stirring after each, until smooth and fully melted.
  • Dip the end of each lollipop stick into the melted candy before inserting it into the center of each cake ball. Coat each ball in the melted candy melts, tapping off any excess. Place the coated pops upright in a foam block to set until hardened.
  • Once the coating has set, drizzle melted white chocolate over the cake pops for a decorative touch, and sprinkle with extra orange zest.
