  • Preheat your oven to 325°F (163°C). Gather your miniature pumpkins.
  • Wash and cut off the tops of the mini pumpkins. Scoop out the insides.
  • Crumple aluminum foil in a baking tray to stabilize the pumpkins.
  • In a medium saucepan, warm heavy cream and vanilla bean paste until just simmering.
  • Whisk egg yolks and granulated sugar together until light and airy.
  • Fold in pumpkin puree, cinnamon, nutmeg, and salt until combined.
  • Slowly pour the hot cream mixture into the egg mixture, whisk continuously.
  • Pour custard mixture into each pumpkin, filling them three-quarters full.
  • Place pumpkins on foil in the tray, add boiling water to create a water bath.
  • Bake for 50 minutes to 1 hour and 10 minutes until mostly set.
  • Let cool at room temperature, then refrigerate for at least 4 hours.
