  • In a large mixing bowl, combine ¾ cup all-purpose flour, ¾ cup granulated sugar, 3 large eggs, and ¼ cup cocoa powder. Whip with an electric mixer on medium speed for about 2-3 minutes until smooth and light.
  • Pour the cake batter into the prepared pan, spreading it evenly. Bake for approximately 12 minutes, until it springs back lightly upon touch.
  • Remove the cake from the oven and invert it onto a kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper, then roll the warm cake up with the towel and allow it to cool.
  • In a separate bowl, whisk together 1 cup mascarpone cheese, 1 cup heavy whipping cream, ¼ cup powdered sugar, and 1 tablespoon espresso until smooth and fluffy.
