Preparation Steps

  • In a medium saucepan over low heat, combine the creamy peanut butter, honey, butter, and salt. Stir continuously for about 5 minutes until smooth.
  • Remove from heat and stir in the vanilla extract until well incorporated.
  • Add the rolled oats to the saucepan, stirring until fully coated.
  • If using, melt the white chocolate chips in a microwave-safe bowl in 20-second intervals until completely smooth.
  • Pour the mixture into a lined 9x9-inch baking dish and press down firmly using a spatula or your hands.
  • Spread the melted white chocolate evenly over the top and sprinkle with crushed peanuts if desired.
  • Refrigerate for about 2 hours until firm to the touch.
  • Once firm, lift out of the baking dish and cut into squares.

Notes

Use natural peanut butter for healthier bars, and be patient while cooling to ensure they set properly.
