  • 2 cups sweet potatoes cooked and mashed
  • ½ cup butter softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup evaporated milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger
  • ¼ teaspoon salt

  • 1 9-inch pie crust prepared

Main Steps

  • Preheat your oven to 350°F (175°C) and place the prepared pie crust into a 9-inch pie dish.
  • Mash the cooked sweet potatoes in a large bowl until smooth.
  • Mix the softened butter with the mashed sweet potatoes until creamy.
  • Add the granulated sugar, brown sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt, and mix until smooth.
  • Pour the filling into the pie crust, smoothing the top.
  • Bake for 50 to 60 minutes until the center is set with a slight wobble.
  • Let the pie cool completely on a wire rack for at least two hours.

Store covered in the fridge for up to 4 days or freeze for up to 2 months. Thaw overnight in the fridge before reheating.
