Ingredients

  • 115 grams Melted butter

  • 200 grams Sugar
  • 1 teaspoon Vanilla extract
  • 2 large Eggs
  • 60 milliliters Fresh lemon juice
  • 60 milliliters Fresh lime juice
  • 1 medium Lemon zest
  • 1 medium Lime zest

Preparation Steps

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter until resembling wet sand. Press into the pan to form the crust.
  • Bake the crust for about 10 minutes or until golden brown, then cool on a wire rack.
  • Beat cream cheese and sugar until smooth and fluffy. Scrape down the sides for even mixing.
  • Add vanilla extract and eggs one at a time, mixing well after each. Pour in lemon and lime juice along with zest, mixing until uniform.
  • Gently fold in chopped cherries and pistachios.
  • Pour the filling over the cooled crust.
  • Bake the cheesecake for 50 to 60 minutes until edges are set, and the center has a slight jiggle.
  • Turn off oven, leave the cheesecake inside with the door ajar for an hour to cool slowly.
  • Chill in the refrigerator for at least 4 hours or overnight.
  • Whip heavy cream until soft peaks form and top the cheesecake.
  • Garnish with whole cherries and extra chopped pistachios, then serve.
