Preparing the Cookies

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt.
  • In a large mixing bowl, cream the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  • Beat in the egg, molasses, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Cover the dough and chill in the refrigerator for at least 30 minutes.
  • Soften the caramel candies in the microwave for 10-15 seconds if they're firm.
  • Scoop about 1½ tablespoons of dough, flatten it, and place a softened caramel in the center. Wrap the dough around it.
  • Roll each cookie ball in granulated sugar and place on the prepared baking sheet, spacing them 2 inches apart.
  • Bake for 10-12 minutes until the edges are set and centers look soft.
  • Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
