  • Preheat your oven to 325°F (163°C).
  • Combine chocolate cookie crumbs with melted unsalted butter until wet sand-like. Press into the bottom of a 9-inch springform pan.
  • Beat softened cream cheese and granulated sugar until smooth using an electric mixer.
  • Gently blend in sour cream until fully incorporated.
  • Add eggs one at a time, mixing on low speed. Stir in caramel sauce and crumbled bacon.
  • Pour cheesecake filling over pre-baked crust, smoothing the top.
