  • In a large mixing bowl, whisk together flour, salt, and sugar. Cut in cubed butter until mixture resembles coarse crumbs. Gradually stir in ice water until dough just comes together. Divide into two disks, wrap in plastic, and refrigerate for 1 hour.
  • In a medium saucepan, melt granulated sugar over medium heat until it dissolves and turns amber, stirring constantly for 8 to 10 minutes. Remove from heat and whisk in butter, then slowly pour in heavy cream while whisking. Stir in sea salt and cool.
  • In a large bowl, toss together apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, lemon juice, and vanilla extract. Ensure apples are well coated and drain excess liquid if necessary.
  • Roll out one disk of pie dough and fit into a 9-inch pie dish. Fill with the apple mixture and pour half of the cooled caramel over the apples.
